Donuts recipe – Reseta di Donuts

Yes another recipe!! This time not a cake, but Donuts!!! Donuts are fun to make and you can decorate the way you want! I made these last week and they are delicious and fluffy.

Ok, let’s start this Donuts madness!!!
Ingredients:
– 35 gr active dry yeast
– 2 Tablespoons warm water
– ¾  cup warm milk
– 2 ½ Tablespoons margarine or butter
– 1 egg
– 1/3 cup sugar
– 1 Teaspoon salt
– 2 ¾ cups flour
– 3 cups vegetable oil
Preparation:
1.       Dissolve the yeast in the warm water
2.       Add the milk, margarine or butter, egg, sugar and salt and blend until smooth

3.       Add half of the flour and mix for a few seconds
4.       Add the remaining flour and knead the dough until smooth

5.       Cover your bowl and leave in a warm place until the dough doubles in size ( about 1 hour).
6.       Roll out the dough on a floured surface until a half inch thick
7.       Punched out the donuts you should  get about a dozen donuts

8.       Place the donuts for about 30-45 minutes in a warm place until they double in size
9.       Heat the vegetable oil in a large frying pan over medium heat

10.   Fry each donut for a few seconds per side or until golden Brown.

And your donuts are ready!!! You can glaze your donuts with chocolate ganache, vanilla glaze or you can colored you glaze in the color you want.

Tiramisu recipe – reseta di Tiramisu

Tiramisu meaning “lift me up”,  is a popular coffee-flavored Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa. The recipe has been adapted into many varieties of cakes and other desserts.

This recipe is easy to make and you don’t need a lot of ingredients. Let’s start baking!!
Ingredients:
  • 5 egg Yolks
  • ¾ cup of sugar
  • 5 egg white
  • Pinch of salt
  • 455 gr. Mascarpone
  • 1 cup of milk
  • 1 ½ cup Decaf coffee
  • 400 gr. Ladyfingers
  • 2 table spoon cacao powder


    Preparations:

    The Coffee mixture

    Combine the decaf coffee with the milk in a small bowl and set aside. 



    The filling
    • Beat the egg yolks and sugar with a mixer till a smooth cream.
    • Mix the mascarpone with the egg yolk mixture until well combined.
    • Beat the egg white and pinch of salt till stiff peaks
    • Fold half of the egg white into the egg yolk-mascarpone mixture, then the remaining half just until fully incorporated. Don’t beat otherwise you will lose all the air.


    Assemble Tiramisu

    • Dip the ladyfingers (per layer) very quickly into the coffee, and line in your bowl
    • Spread a layer of the mascarpone filling over the lady fingers and repeat this till you reach the top of the bowl ending with the mascarpone filling.
    • Dust the top with cocoa powder. Cover with plastic wrap and refrigerate at least 3 hours.
    • When ready to serve, dust with extra cocoa powder. Leave out at room temperature about 20 minutes before serving.

      Important: Tiramisu can be chilled up to 2 days, but no longer or else the ladyfingers will break down too much.

      Ice cream base recipe (without ice cream maker)

      Ingredients
      • 495 ml cold sweetened condensed milk can
      • 500 ml cold  whipping cream

      Instructions
      • Beat the cold heavy cream on medium speed with a mixer. Use a whisk attachment to beat the cream until stiff peaks form.
      • Turn down the speed a little bit and pour the condensed milk into the whipped cream. 
      • Then, turn up the machine speed again and whip until your mixture is thick and have stiff peaks.

      Now you have your ice cream base you can add in your desired flavors. After flavoring your ice cream put in a container and freeze at least 5 hours before eating.



      Flavors you can add to your ice cream base
      • Cookies and Cream Ice cream: Mix a half a cup crushed Oreo Cookies into 2 cups ice-cream base
      • Marshmallow and Strawberry: A few marshmallow and 2-3 table spoon strawberry syrup. The marshmallow is optional. You can add for example strawberries instead of the marshmallow or only the strawberry syrup is also delicious.
      • Vanilla and Oreo chocolate cake Ice cream: Break 1-2 slice of the cake into pieces and add it to  your ice cream
      These are just some examples….. You can add anything you like and made your own ice cream flavor. Trust me this ice cream taste better then the one in the supermarket.

      Recipe: How to make Ganache (YouTube video)

      Ganache is a very delicious frosting. You can use it on cupcakes or as filling in cakes. But nowadays people use it to crumbcoat cakes.

      Using Ganache is better then buttercream. Ganache gets hard so you can make sharp edges for your cakes. As you can see on the picture above the cake has sharp edges, so when you cover your cake with fondant or marzipan you don’t have so much trouble to create sharp edges.

      To make Ganache you only need 2 ingredients: Semi Sweet chocolate and Cream. In this YouTube Video I will show you how to make Ganache.

      What do you need:
      1200 gram Semi Sweet Chocolate
      600 gram Cream

      Just follow the steps in the YouTube video and you will have a very delicious Ganache to cover or fill your cakes, cupcakes etc…

      Apple cake recipe – Bolo di Appel

      In the past if someone has asked me, “do you want a piece of Apple cake” I would say no way. I start eating Apple cake, when I was in Scotland for work. After eating dinner I saw Apple crumble cake with custard on the menu. I thought maybe I should give it a try and since then I’m a Apple cake lover.

      The combination of Apple cake and custard is a very delicious combination. So after making this recipe, maybe you can try to make some custard to eat with the cake.
      Ok, let start the fun!!!

      Preheat your oven at 180 degrees Celsius.
      Ingredients for the cake dough:
      300 gr flour
      200 gr soft butter
      100 gr of sugar
      1 egg
       All the ingredients has to be on room temperature!
      Preparation:
      Make a hole in the middle of the flour and put the butter, sugar and egg in the middle. Knead the flour little by little and knead to a smooth dough. Press the dough flat, wrap it in a plastic paper and let it rest  for about 30 minutes in the refrigerator.
      After 30 minutes take the dough out of the refrigerator and roll it out. Use ¾ of the dough to put in the baking pan.
      Ingredients for the filling:
      75 gr. of raisins
      50 gr. of Brown sugar
      3 teaspoons cinnamon
      3 Apples
      Soak the raisins for 15-30 minutes in warm water.  After 30 minutes use a paper towel to dry out the raisins. Peel the apples  and cut them into small cubes. Mix the raisins, brown sugar and cinnamon through the apples.
      Fill the baking pan with the apple filling and spread evenly.
      Roll out the remaining dough and cut it into strips and place them diagonally over the filling. Sprinkle a little cinnamon on the filling and put the apple cake in the preheated oven for 1 hour.
      Voila your Apple cake is ready!!

      Butter cookies recipe

      Everybody loved cookies!! Or is it only me (hahahaha) This is a very easy dough to make. Actually you can use this dough for a lot of pastry recipe for example lemon curd tart.

      Ok, let start the fun.

      Preheat your oven at 180 degrees Celsius.
      You can bake approximately  35 cookies (or more) with this dough
      Ingredients:
      300g flour
      200 g soft butter
      100 g of sugar
      1 egg

       All the ingredients has to be on room temperature!

      After 30 minutes take the dough out of the refrigerator and roll it out. With a cookie cutter cut your cookies out and put them on a tray with baking paper.

      I sprinkle some confetti on my cookies. Just to make the cookies more fun and colorful.

      Bake your cookies for about 10-12 minutes or till they are golden brown. Don’t over baked them otherwise the cookies will be very hard.

      You can store the cookies for 1 – 2 weeks in a cookie jar!

      Salted Caramel recipe

      Last weekend I made a delicious Pineapple salted caramel cake.  I garnish the cake with cashew nuts and of course the salted caramel.



      Today I will share the salted caramel recipe and next week the Pineapple caramel cake. The cake is very easy so first you need to learn how to make the salted caramel.
      With this recipe you get about 2 cups of salted caramel.
      Ingredients:
      ·         400gr sugar
      ·         165gr butter
      ·         250ml cream
      ·         salt (you can decide yourself how salty you want your caramel. I put 1.5 teaspoon of salt)
      Instructions:
      ·         Heat the sugar in a pot and as soon as the sugar has dissolved, remove it from the heat and add the butter in parts.
      ·         Just keep whisking till all the butter is dissolved.
      ·         Return the pot to the heat and add the cream immediately, still whisking vigorously.
      ·         When the sauce has become smooth remove it from the heat and add a good sprinkle of salt which dissolves.
      ·         Allow the caramel to completely cool and stir in another good sprinkle of salt which remains in its granular form.

      Apple – Raspberry cake recipe (Reseta pa bolo di Appel/Rasberry)

      Apple Raspberry cake

      I want to share a very simple Apple-Raspberry cake recipe with you today. You actually need one bowl to make this cake. This cake is perfect for when you have visitors. It’s very delicious with a cup of coffee or tea.

      Which ingredients do you need:
      – 1 1/2 cup flour
      – 200 grams of sugar
      – 125 grams of butter
      – 1 teaspoon vanilla extract
      – 2 eggs
      – 1/2 cup milk
      – 1 apple, thinly sliced
      – 200 grams of frozen raspberry
      – 2 Tablespoons of sugar cane

      Make sure all your ingredients are at room temperature and that you follow the recipe. For this cake, I used a baking pan with a diameter of 22 cm.
      Preheat your oven to 160 degrees Celsius.

      And now we can start making the batter. And this batter is very easy because you only need one bowl.

      Preparation:
      1 Put flour, sugar, butter, eggs and milk, I have a bowl and mix together well for 2-3 minutes.

      2 Grease your baking pan and place baking paper into your baking pan. Put your batter into your baking pan.

      3 Place the sliced ​​apples and raspberry on the batter and finally sprinkle the 2 tablespoons of sugar cane on your apples and raspberry.

      4 Bake your cake for 45 minutes or until it is completely cooked.

      Jelly donuts Recipe

      Yes you read it right the recipe that I’m going to share with you today is Jelly donuts. These donuts are so delicious and easy to make. Everyone had experience this once that dry and non tasty donuts of the supermarket. So why not make your own fresh Jelly donuts at home.
      OK, enough talking chop chop…….
      Ingredients:
      5 cups of All Purpose Flour
      14 gr Yeast
      1/3 cup of Granulated Sugar
      1-1/2 cups of Whole Milk ( warmed to  115 degrees)
      1/4 cup of Unsalted Butter, melted
      1/4 cup of Shortening, melted
      2 Eggs
      3/4 teaspoon of Salt

      With this recipe you can make about 20 donuts.

      Steps
      In a small bowl, add the warm milk and sprinkle over 1 tsp of sugar and the yeast.  Put aside for about 5 minutes  until it starts to foam.
      In the bowl of a standing mixer, add the sugar, eggs, salt, melted butter and shortening and mix with a dough hook. Add the yeast mixture and keep mixing.


      Add the flour, mix on low until the flour is incorporated, increase the speed to medium and mix the dough until the dough is nice and smooth.


      Place the dough into a greased bowl, cover with plastic wrap and place it somewhere warm to double in size (takes about 2 to 3 hours).


      After the dough is double in size put it onto a floured surface, punch it down, roll it out to a 1/2 inch thickness.


      Line a couple of baking sheets with parchment paper and sprinkle some flour on each one.
      Use a cookie cutter (3.5 inch) to cut out your donuts. Place the donuts on your baking sheets. Don’t place them to far apart only a couple inches and cover them with a towel. Let them rise in a warm spot for about half an hour or until double in size.


      Add enough oil into your  the pan.  Allow the oil to come up to approximately 350 degrees.
      Once the donuts have risen, gently lower them into the hot oil and fry them till they are golden brown on each side. Take them out of the hot oil and place them on a paper towel to drain the excess oil.


      Coat the hot donuts in the sugar. Put them aside to cool down properly.


      Fill a piping bag  with your favorite jam. I used strawberry jam, but you can use any jam you want. Make a small hole with a lollipop stick and then stick the piping bag about half way into the donuts  and squeeze out the jam.


      Now you are ready to eat these delicious Jelly donuts. Enjoy.

      Butter Cake recipe – Reseta pa bolo di manteka

      In my home town Curacao the butter cake is one of the most sold cakes. It’s very easy to make and it’s also very delicious. You can buy it every where in the supermarkt or just at a local snack.
      I received a lot of request to make a how to Cashew cake Youtube video, but before that I will start with the “Bolo di manteka” (butter cake) The reason why I start with the butter cake is because this cake is the base for the cashew cake. You need butter cake to make the cashew cake.
      The ingredients for the butter cake are:
      • 8 eggs
      • 2 cups of sugar
      • 2 teaspoon of vanilla extract
      • 3 teaspoon of almond extract
      • 2 cups of milk
      • 230 gr. butter
      • 4 cups of flour
      • 4 teaspoon of baking powder
      • 1 teaspoon of salt
      On below Youtube video I will show you step by step how to make the butter cake. Just follow the steps and you will finished with a delicious and soft butter cake.
