Oh dear !!! I’ve never before colored, kneed fondant and decorate a cake in 45 minutes !!! Yes, it happened to me this Yesterday.
I was watching television and I got the following message “I leave in 15 minutes” . I was like okay!! You have to pick up the cake tomorrow ….. No, today at 19.00. I quickly check my agenda. I almost fell from my chair. It’s true ! The birthday of this gentlemen is today, but his girlfriend wanted the pick up the cake a day earlier. So yesterday 🙂
I already baked, filled and crumb coat the cake in the afternoon. I only needed to decorate the cake. Lucky me it was not a complicated cake. So within 45 minutes it was done.
I had to share this story with you all. This has never happened to me before. The client herself was all smiling when she saw the cake and didn’t mind that I mixed up the days.

Ganache is a very delicious frosting. You can use it on cupcakes or as filling in cakes. But nowadays people use it to crumbcoat cakes.
Using Ganache is better then buttercream. Ganache gets hard so you can make sharp edges for your cakes. As you can see on the picture above the cake has sharp edges, so when you cover your cake with fondant or marzipan you don’t have so much trouble to create sharp edges.
To make Ganache you only need 2 ingredients: Semi Sweet chocolate and Cream. In this YouTube Video I will show you how to make Ganache.
What do you need: 1200 gram Semi Sweet Chocolate 600 gram Cream
Just follow the steps in the YouTube video and you will have a very delicious Ganache to cover or fill your cakes, cupcakes etc…

Part – 1 You need to melt some marshmallow in your microwave for approximately 5 seconds and then add rice crispy. Start making the head of the horse. You need to move quickly. For less stickiness you can smear Crisco on your hands.
Let it dry for 24 hours. In the meantime you can make ganache. In another video I will make a how to for ganache and modelling chocolate recipe.
Smear the ganache over the rice crispy and let the ganache dry too.
Roll out your modelling chocolate and start forming the first part of the head.Giving the horse some full cheeks. Try to have fun making this topper and keep modelling till you have the result that you want.

I guess you also want to see the cake…. It was a 3 layer cake with the Horse head on Top. First layer is a pant, the second layer is airbrushed with clouds, mountain and flowers and on the third layer you can see on the side the horseshoe.

Last week I came back from vacation. I visit Thailand – Phuket. It was a very special experience for me. I never travel so far. I was like at the other side of the world. I was very exhausted when I arrived at the airport of Phuket. It was like 20 hour journey before I arrived in Phuket.
I was like yeah we made, but then the driver told us it’s about 1,5 hour driving to the hotel. I was like “Say what”? Hhahahaha but I enjoy the whole 1,5 hour looking around.
Something that I was very curious for was the food. I taste so many delicious food and also ask for the recipes, so I can try them myself.
A sweet that is often eaten in Phuket is pancake. You can find these pancakes stand everywhere. It’s not like the normal pancake that we used the eat, but it filled with different things for example Mango, Banana, Strawberry, Nutella etc…
One night when I was walking to the hotel and I took a moment to film a man who was making these pancakes. I need to say this doesn’t see very easy to make, but I’m going to try it once. He does it very fast of course he is a pro 🙂
I saw a lot more sweets, but I was not aloud the film every where. But I took notes 🙂

In the past if someone has asked me, “do you want a piece of Apple cake” I would say no way. I start eating Apple cake, when I was in Scotland for work. After eating dinner I saw Apple crumble cake with custard on the menu. I thought maybe I should give it a try and since then I’m a Apple cake lover.
The combination of Apple cake and custard is a very delicious combination. So after making this recipe, maybe you can try to make some custard to eat with the cake.
Ok, let start the fun!!!
Preheat your oven at 180 degrees Celsius.
Ingredients for the cake dough:
300 gr flour
200 gr soft butter
100 gr of sugar
All the ingredients has to be on room temperature!
Make a hole in the middle of the flour and put the butter, sugar and egg in the middle. Knead the flour little by little and knead to a smooth dough. Press the dough flat, wrap it in a plastic paper and let it rest for about 30 minutes in the refrigerator.
After 30 minutes take the dough out of the refrigerator and roll it out. Use ¾ of the dough to put in the baking pan.
Ingredients for the filling:
75 gr. of raisins
50 gr. of Brown sugar
3 teaspoons cinnamon
Soak the raisins for 15-30 minutes in warm water. After 30 minutes use a paper towel to dry out the raisins. Peel the apples and cut them into small cubes. Mix the raisins, brown sugar and cinnamon through the apples.
Fill the baking pan with the apple filling and spread evenly.
Roll out the remaining dough and cut it into strips and place them diagonally over the filling. Sprinkle a little cinnamon on the filling and put the apple cake in the preheated oven for 1 hour.
Voila your Apple cake is ready!!

I love peanut butter and chocolate cake! I have made a lot of sweets with peanut butter, but never before peanut butter frosting. I have heard a lot about the combination of peanut butter frosting with chocolate cake, but never try to make it.
I like to play with ingredients so I can make new recipe. So last weekend I try to make peanut butter frosting my way and it was delicious. I don’t know if anyone else make it this way, but if they do it’s the most delicious peanut butter frosting ever. This frosting even more delicious in combination with chocolate cake. 2 cups of confectioner Sugar
¼ cup of butter 1 cup of peanut butter 8 oz cream cheese ½ teaspoon of vanilla extract 1 tablespoon of milk, if the frosting is to stiff
All the ingredients has to be at room temperature
Cream together the butter, peanut butter, cream cheese and vanilla until well combined in a bowl
Add the confectioner sugar little by little into the bowl and beat until well combined. If your frosting is a little bit too stiff add the 1 tablespoon of milk
Your frosting is ready to fill and decorate your chocolate cake.
