Banana Cake recipe & banana ice cream recipe

Yesterday I wanted to eat something sweet but also healthy. I need some vitamines, because next week it will be a bussy week in Browny’s Cakes kitchen.

I was walking in the supermarket looking for ice cream and I though, instead of buying ice cream why not making my own ice cream. I have an ice cream maker at home and I only used it twice.

This ice cream maker I have it since I was a student. It’s not big but is good enough for one ice cream bucket. I bought some bananas and went home.

At home I was thinking ” I have some bananas for my ice cream, but I can also make a banana cake”.

Ok, enough talking and let’s start making this banana cake and ice cream.

Banana ice cream recipe:

Ingredients:

  • 3 Bananas
  • 1 cup milk
  • 1 cup whipped cream
  • 1 can of condensed milk (379gr)
  • 1/2 teaspoon of yellow color
You need an ice cream maker and a blender to make this ice cream.
Preparations:
  • Put you ice cream maker one day ahead in the freezer.
  • Cut your bananas into pieces and put them in your blender. Blend your bananas for a few seconds.
  • Now put the rest of the ingredients into your blender and blend for 1-2 minutes.
  • After blending all the ingredients together, put mixture in your ice cream maker.
  • Let your ice cream mixture for about 45 minutes till 1 hour in your ice cream machine. The mixture is ready when it changed into a thicker consistency.
  • When your ice cream mixture is thick enough, take it out the ice cream maker and put it into plastic container.
  • Put your ice cream for about 3-5 hours into the freezer. Take it out after 3-5 hours and then you can start scooping your delicious banana ice cream.
Banana cake recipe:

This recipe is for a 20 cm (8 inch) cake! 
Preheat your oven at 175 degrees celcius
Baking time: 50 minutes – 1 hour
Ingredients:
  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon almond extract or banana extract
  • 1 cup milk
  • 115 gr butter
  • 2 cup of flour
  • 2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 2 mashed bananas. You can do this with a fork.
  • 1/2 teaspoon of baking soda
Preparations:

First grease your cake pan with butter and flour. This prevents the cake to stick in your cake pan.
  • Cook the milk and the butter in a pan till the butter is melted. Take the pan from the stove and let the milk and butter mixture cool off,
  • Beat your eggs with a mixer for about 5 minutes. The eggs has to be light and fluffy.
  • Keep mixing the eggs and add the almond extract and the sugar little by little into the eggs mixture. Don’t do it too fast otherwise you will lose all the air of the egg mixture.
  • Sift the flour, bakingpowder, baking soda  and salt together,
  • Add the mixture of flour, bakingpowder, baking soda and salt little by little into the eggs and sugar mixture,
  • Add now the mashed bananas and mix for 1-2 minutes,
  • Take a little bit of the batter and put it into the milk and butter mixture and mix with a beater,
  • When the  batter is dissolved into the milk with butter you can mix the rest of the batter with the milk and butter mixture,
  • Put your cake batter in your cake pan and bake your cake for 50-60 minutes.
  • Your cake is ready when your insert a toothpick into your cake and it comes out dry.

Have fun baking this delicious Banana cake!!! You can combined your banana cake with you banana ice cream for a sweet and delicious dessert.

Minnie mouse Cake topper Tutorial

Last weekend I post 2 Youtube videos on how to make the Minnie mouse cake topper on the picture above. 
Like 3 weeks ago I made a Minnie mouse cake with a Minnie mouse head as cake top. See the picture below.
I received so many questions about this Minnie mouse cake topper, that I decided to make a how to about it. 
This how to is devided in 2 videos. It’s very easy to make this Minnie Mouse cake topper you only need patience.
Because this week is Valentine week I put some hearts on the bow. You can use this Minnie mouse cake topper for a cake for your Valentine……..

Minnie Mouse Birthday Cake

Last week I made a Minnie Mouse cake for the 1st Happy birthday of Lujain. This cake was so cute. I’m still in love with the pink colours and ofcourse the Minnie mouse head Cake topper.

The cake topper is made of gumpaste. I made this cake topper 4 days before the delivery day. If you want to sculpt something you have to make them in advance so they can dry properly.

I used below drawing as a guide to make the cake topper. You can google any drawing that you want. Print your drawing out and use it as a guide like I did. I used a cutting tools. This tool is also available on my webshop.

The minnie mouse heads (see picture below) on the side of the cake are made with marzipan. Marzipan don’t gets hard. So you can als made these in advance to spare you some time, the day that you need to bake an decorate the cakes.

The cake is a Red Velvet cake. For the recipe click here! The cake is filled with buttercream. You can make buttercream from scratch or you can buy the buttercream mix on Browny’s Cakes webhsop. I crumb coat the cakes using butter cream as well. On below picture you can see the proces.

I covered the cake with fondant. This cake is for 32-35 persons. It has 3 tiers stack on each other.
The cake pans that I used  are 25cm, 20 cm and 10 cm round cake pans. Also available on my webshop.

Recipe: How to make Profiteroles (recept di soesjes)

Like I promised in my last blog, I just upload the Youtube video on “how to make profiteroles”. I know that many people have difficulty making and baking profiteroles. It’s not an easy recipe, but if you keep practicing eventually you will be the best Profiteroles baker 🙂
Below I will put the recipe and on the Youtube video you can see how I made the dough, pipe the dough and bake the profiteroles.
Take notice: Don’t take your profiteroles immediately out of the oven when the baking time is over. Do your oven off and let them about 10 minutes in the oven and than take them out. 
You are wondering why…. Otherwise you will lose all the air in your profiteroles. And you will have flat profiteroles. Like I say practicing will help!
I filled my profiteroles with custard and garnish them with chocolate and confectioner sugar. If you want the custard recipe let me know.
Ingredients:
  • 1/2 cup milk
  • 1/2 cup water
  • 115 g butter
  • 1teaspoon sugar
  • 1/4 teaspoon salt
  • 1cup flour
  • 3-4 eggs

Preheat your oven at 175 Degrees Celsius.

Catching up…Chocolate cake, Minni Mouse, sale…..

Last week I was so busy with Browny’s Cakes webshop, cakes order and editing my new Youtube video.
In this blog I will update you about some things that I did last week.

Let’s start with the chocolate cake. Last week was the birthday of a twins. There was not a big birthday party so the cake had to be simple and ofcourse tasty. I made a chocolate sponge cake and filled & covered the cake with buttercream! I love buttercream a lot! It taste good and melt on your tongue. One happy customer again.

How to make a cute bow with gumpaste

I like making bows for my cakes. Bows are so cute on cakes. Especially little girls party or a baby shower.

I made a 2 part Youtube Tutorial were I’m showing you how to make the bow on the pictures.

You need a few things to make this bow:

  • Gumpaste (click here for a blog where I explain how to make gumpaste)
  • Edible glue
  • Ruler
  • rolling pin
  • Napkins

Chocolate Chunks cookies – Kuki yena ku Chuculati

Happy New year. I hope you are enjoying this new year. I wish you all the best and sweet things in this new year!

May I know what is the first sweet thing, that you bake this year… Was it a Cake, Cupcakes, Cookies….

I made a delicious and easy Chocolate Chunky cookies. I need to start this year with easy sweets. I eat a lot in december so….. Instead of not eating sweets, I’m going to build up slowly this year. If you are on a low fat diet, you can use low fat ingredients to bake these cookies. Instead of semi sweet chocolate you can use dark chocolate.

Ok enough chit chat lets bake some cookies!!! On the Youtube video below I will show you how to prepare the cookie dough and you will also see the end results.

This recipe is for 1 dozen cookies (12)
Oven: 175 degrees celcius
Baking time:15 minutes

Ingredients:

  • 113 gr. butter
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large eggs
  • 1 1/2 cups of flour
  • 1 teaspoon baking soda
  • 155 gr of semi sweet chocolate (chop in chunks)
Preparation: follow the Youtube tutorial below. In this Youtube tutorial I’m only making 1 dozen cookies (12). If you want to make 2 dozen cookies you need to double the ingredients. Use instead of 1 egg – 3 eggs!

Baking soda and baking powder, what is the difference?

In the past few weeks I receive a lot of question, about what is the difference between Baking Soda and Baking powder? So I decide to write a short blog about the difference between the Baking soda and Baking powder.
Baking soda and Baking powder are both leavening agents. When included in a batter, the leavening agent causes air bubbles to expand when cooked. This causing it to rise.
Baking soda
Baking soda is a pure leavening agent. It needs to be mixed with moisture and an acidic ingredient for the necessary chemical reaction to take place to make food rise. Because it needs an acid to create the rising quality, it is often used in recipes where there is already an acidic ingredient present, such as lemon juice, chocolate, buttermilk or honey. For example you use baking soda to bake a Red Velvet cake. One of the ingredients to make  Red Velvet cake is buttermilk.
Baking powder
Baking powder, which contains bicarbonate of soda, comes pre-mixed with the acidic ingredient for you – so all you need to add is the moisture. The acidic ingredient most often used in baking powder is cream of tartar. Baking powder has a neutral taste and is often used in recipes that have other neutral-tasting ingredients, such as milk.
Cream of tartar
With cream of tartar you can make your own baking powder. Simply mix two parts cream of tartar with one part bicarbonate of soda and you have baking powder.
