Everybody loved cookies!! Or is it only me (hahahaha) This is a very easy dough to make. Actually you can use this dough for a lot of pastry recipe for example lemon curd tart.

Ok, let start the fun.

Preheat your oven at 180 degrees Celsius.
You can bake approximately  35 cookies (or more) with this dough
Ingredients:
300g flour
200 g soft butter
100 g of sugar
1 egg

 All the ingredients has to be on room temperature!

Preparation:
Make a hole in the middle of the flour and put the butter, sugar and egg in the middle. Knead the flour little by little and knead to a smooth dough. Press the dough flat, wrap it in a plastic paper and let it rest  for about 30 minutes in the refrigerator.

After 30 minutes take the dough out of the refrigerator and roll it out. With a cookie cutter cut your cookies out and put them on a tray with baking paper.

I sprinkle some confetti on my cookies. Just to make the cookies more fun and colorful.

Bake your cookies for about 10-12 minutes or till they are golden brown. Don’t over baked them otherwise the cookies will be very hard.

You can store the cookies for 1 – 2 weeks in a cookie jar!

Salted Caramel recipe

Last weekend I made a delicious Pineapple salted caramel cake.  I garnish the cake with cashew nuts and of course the salted caramel.



Today I will share the salted caramel recipe and next week the Pineapple caramel cake. The cake is very easy so first you need to learn how to make the salted caramel.
With this recipe you get about 2 cups of salted caramel.
Ingredients:
·         400gr sugar
·         165gr butter
·         250ml cream
·         salt (you can decide yourself how salty you want your caramel. I put 1.5 teaspoon of salt)
Instructions:
·         Heat the sugar in a pot and as soon as the sugar has dissolved, remove it from the heat and add the butter in parts.
·         Just keep whisking till all the butter is dissolved.
·         Return the pot to the heat and add the cream immediately, still whisking vigorously.
·         When the sauce has become smooth remove it from the heat and add a good sprinkle of salt which dissolves.
·         Allow the caramel to completely cool and stir in another good sprinkle of salt which remains in its granular form.

Apple – Raspberry cake recipe (Reseta pa bolo di Appel/Rasberry)

Apple Raspberry cake

I want to share a very simple Apple-Raspberry cake recipe with you today. You actually need one bowl to make this cake. This cake is perfect for when you have visitors. It’s very delicious with a cup of coffee or tea.

Which ingredients do you need:
– 1 1/2 cup flour
– 200 grams of sugar
– 125 grams of butter
– 1 teaspoon vanilla extract
– 2 eggs
– 1/2 cup milk
– 1 apple, thinly sliced
– 200 grams of frozen raspberry
– 2 Tablespoons of sugar cane

Make sure all your ingredients are at room temperature and that you follow the recipe. For this cake, I used a baking pan with a diameter of 22 cm.
Preheat your oven to 160 degrees Celsius.

And now we can start making the batter. And this batter is very easy because you only need one bowl.

Preparation:
1 Put flour, sugar, butter, eggs and milk, I have a bowl and mix together well for 2-3 minutes.

2 Grease your baking pan and place baking paper into your baking pan. Put your batter into your baking pan.

3 Place the sliced ​​apples and raspberry on the batter and finally sprinkle the 2 tablespoons of sugar cane on your apples and raspberry.

4 Bake your cake for 45 minutes or until it is completely cooked.

Jelly donuts Recipe

Jelly Donuts – Jelly Donuts – Jelly Donuts – Jelly Donuts – Jelly Donuts – Jelly Donuts – Jelly Donuts

Yes you read it right the recipe that I’m going to share with you today is Jelly donuts. These donuts are so delicious and easy to make. Everyone had experience this once that dry and non tasty donuts of the supermarket. So why not make your own fresh Jelly donuts at home.
OK, enough talking chop chop…….
Ingredients:
5 cups of All Purpose Flour
14 gr Yeast
1/3 cup of Granulated Sugar
1-1/2 cups of Whole Milk ( warmed to  115 degrees)
1/4 cup of Unsalted Butter, melted
1/4 cup of Shortening, melted
2 Eggs
3/4 teaspoon of Salt

With this recipe you can make about 20 donuts.

Steps
In a small bowl, add the warm milk and sprinkle over 1 tsp of sugar and the yeast.  Put aside for about 5 minutes  until it starts to foam.
In the bowl of a standing mixer, add the sugar, eggs, salt, melted butter and shortening and mix with a dough hook. Add the yeast mixture and keep mixing.


Add the flour, mix on low until the flour is incorporated, increase the speed to medium and mix the dough until the dough is nice and smooth.


Place the dough into a greased bowl, cover with plastic wrap and place it somewhere warm to double in size (takes about 2 to 3 hours).


After the dough is double in size put it onto a floured surface, punch it down, roll it out to a 1/2 inch thickness.


Line a couple of baking sheets with parchment paper and sprinkle some flour on each one.
Use a cookie cutter (3.5 inch) to cut out your donuts. Place the donuts on your baking sheets. Don’t place them to far apart only a couple inches and cover them with a towel. Let them rise in a warm spot for about half an hour or until double in size.


Add enough oil into your  the pan.  Allow the oil to come up to approximately 350 degrees.
Once the donuts have risen, gently lower them into the hot oil and fry them till they are golden brown on each side. Take them out of the hot oil and place them on a paper towel to drain the excess oil.


Coat the hot donuts in the sugar. Put them aside to cool down properly.


Fill a piping bag  with your favorite jam. I used strawberry jam, but you can use any jam you want. Make a small hole with a lollipop stick and then stick the piping bag about half way into the donuts  and squeeze out the jam.


Now you are ready to eat these delicious Jelly donuts. Enjoy.

How to make some Gumpaste Flowers

Two weeks ago, I made ​​a nice monkey cake with on the top some beautiful flowers. I made these flowers with gumpaste. If you don’t have gumpaste and you want to make it yourself, click here for the “How to make gumpaste” tutorial.  You can also make these flowers with fondant, but you have to work faster because fondant is not as elastic as gumpaste.

I received a lot of emails asking me if I can show how I made the flowers on the monkey cake. In this blog I’m  going to show you how I made these flowers. They are very easy to make. You just need a little bit of patience because it is a process to make them.

What do you need:
1 Gumpaste
2 Petal cutter
3 Edible glue
4 Ball tool
5 Rolling pin
6 Veiner
7 Foam pad mat
8 Some cups to let the petals dry on.

Steps:

1. Roll your fondant very thin and cut out the petals with your petal cutter. I do them one by one, but If you want you can make more at once and store them in a plastic bag. This prevents the other petals to dry out.

2 Put your first petal in the veiner and press very gently otherwise you can break the petal. The veiner helps to give your flower a more realistic form.

3 Put your petal on your foam pad mat and make a wavy motion on the edge of the petal with your ball tool. Making this motion with your ball tool you give your petal a more curly and realistic shape. You will need 4 petals to make this flower.

4 Put your petals one by one in your cups. If you don’t have these cups you can also make your own with foil. The cups helps to the petals to dry in a nice shape. let the flowers dry out completely for 1 day.

5. When flowers are completely dried you can put some color on them with color dust or you can use edible glitter for some shine.

Cashew frosting for cashew cake (crema pa bolo di cashew pete)

Cashew cake – Bolo di cashew pete
If you come from the Caribbean Island, you must know this cake “Bolo di Cashew pete” Cashew cake. It is a very delicious cake and quite expensive. It is expensive because of the cashew nuts. The cashew nuts are quite expensive which is why some people have a pretty high price tag on this cake.

Cashew cake is not difficult to make, but it takes a little bit of time to bake the cake and make the filling. If you love baking, then it will not be a problem for you to make this cake.  And of course if you do not want to bake the cake yourself  you have me. Ok enough talking JThis blog is to teach you how to make the cashew filling for the Cashew cake. You do not need a lot of ingredients to make this cake.




Ingredients:
750gr. unsalted and ground cashew nuts
150 gr. sugar
1 tin of condensed milk
500 ml of water
Alcohol (For example Amaretto, Bacardi, rum etc …)
lime extract

Just to give you some idea. The cake above of the cashew cake is a standard one. I like to play around with cakes. So once I make this cake in a bunny form for a one year birthday girl.

Happy Monkey Cake

This is a very special cake. I received a message 2 weeks ago from a lady who work at a place for mentally disabled people. She asked me if I can make a special cake for a lady who is turning 91 years old. Her name is Corrie and she is a mentally disabled woman. She told me that Corrie love Apes and colors. So I could make the cake as colorful as I can.

I was very happy to make this cake, because Corrie is special and she is turning a respectful age. Hopefully I can turned at least 45 year old.

I start first by sketching the cake. I usually  sketch my cakes ideas and check which colors will fit with my cake idea.

All the flowers on the cake are handmade with gumpaste. So I had to make the flowers in advance, so they can dry. Gumpaste flowers are very delicate so they need to dry properly so you can use them on your cake. Below you can see the flowers, that I made for this cake. In another blog I will put the how to make these flowers. They are very easy to make. You only need to have some patient.

 I made Chocolate Oreo cookie butter cream. This frosting is so delicious you can eat it out of the bowl. Yammie frosting!!

Chuggington cake and recap of the last 2 months

Recap of the last two months
Hi everyone. It has been a while that I write a new blog. I have been very busy with baking cake and the webshop of Browny’s Cakes. I didn’t blog as much as I wanted these 2 months, but I kept the blog updated with new pictures. Take a look in the gallery for all the new cakes. Dinosauros youtube video
Here a short youtube video of a Dinosauros cake that I made. The Dinosauros is made with rice crispies and the cake is painted with edible color paste. Everything to make this cake is obtainable on the webshop so check the webshop out.

Chuggington cake
One of my favorite cake out of the bunch is the chuggington Cake. This was the second time that I had to make a cake with the theme Chuggington. The first time I didn’t knew what Chuggington was. Every time again I learn about a new cartoon and that’s is very fun. I’m more of the Tom & Jerry time (hahahahaha) and they are already old school.

Making a cake is a process. You start with the client wishes. For example what for flavor cake, for how many person and what is the theme for the cake. With all the information provided by the client, I can start sketching the cake.

Below you can see the first sketch that I made for the chuggington cake. I wanted to make a 2 tiers cake with Brewster the train on top. Sometimes I can sketch a cake and during the whole process of making the cake, I make some changes. Or the client can also have a last minute change of mind. This client asked me 5 days before the birthday to make the cake bigger, because she invited more people. So instead of the 2 tiers on the sketch below I made a 3 tiers cake.

After sketching the cake, I start with all the little things that I need to make for the cake. For this cake I had to make traffic signs, balloons, flowes, ladybugs, the train etc… I had to make these things in advance, so they can dry properly.

I love painting on cakes, it’s very relaxing. For this Chuggington cake I paint 2 of the cake tiers to give the cake a more realistic look. To paint on a cake I use edible color paste with a little bit of alcohol. Don’t be scare the alcohol will evaporate and you won’t taste it anymore.

After making all the small things and painting the tiers it’s time to start stacking the cakes. It’s not so easy because you have to make sure, that all the cakes are level.

Taddaaaaaaa the cake is ready. It was a colorful and playful cake to make and the client was very happy with the cake. Happy birthday to Joshua.

Butter Cake recipe – Reseta pa bolo di manteka

In my home town Curacao the butter cake is one of the most sold cakes. It’s very easy to make and it’s also very delicious. You can buy it every where in the supermarkt or just at a local snack.
I received a lot of request to make a how to Cashew cake Youtube video, but before that I will start with the “Bolo di manteka” (butter cake) The reason why I start with the butter cake is because this cake is the base for the cashew cake. You need butter cake to make the cashew cake.
The ingredients for the butter cake are:
  • 8 eggs
  • 2 cups of sugar
  • 2 teaspoon of vanilla extract
  • 3 teaspoon of almond extract
  • 2 cups of milk
  • 230 gr. butter
  • 4 cups of flour
  • 4 teaspoon of baking powder
  • 1 teaspoon of salt
On below Youtube video I will show you step by step how to make the butter cake. Just follow the steps and you will finished with a delicious and soft butter cake.
